Clean the beef tripe thoroughly under cold running water and cut it into bite-sized pieces.

In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.

Add the tripe pieces to the pot and cook for about 5 minutes, stirring occasionally.

Stir in the paprika, black pepper, and salt, mixing well to coat the tripe.
