Start with 1 and 1/2 tablespoons of ginger-garlic paste in a bowl.

Squeeze the juice of one complete lemon into the mixture and mix well using a brush.

Spread the mixture on top of the lamb leg, ensuring to coat it evenly.

Make deep cuts into the lamb leg and smear the spice mixture into the cuts as well.

Marinate the lamb for 2 to 3 hours or overnight for best results.

Preheat the oven to 150°C (approximately 300°F).

Cover the marinated lamb with aluminum foil and place it in the oven to bake for 2 hours.

Remove the aluminum foil and bake again until the top is golden brown, basting with the juices released from the lamb.

In a separate pot, bring water to a boil and add 1 teaspoon of salt for the saffron rice.

Add 2 cups of soaked basmati rice (soaked for 1 hour) to the boiling water and boil until 70-80% done.

Prepare saffron by adding 1/2 to 1 teaspoon of saffron to a small bowl and pouring boiling water over it to extract the color.

In the same pot used for boiling rice, add some oil and then add the drained rice.

Make small holes in the rice with the back of a spoon and pour the saffron water over the rice.

Cover the pot and let the rice cook for 15 minutes.

After 15 minutes, check the rice and add a little butter to it to prevent sticking.

Serve the lamb roast with the saffron rice and optionally with air-fried French fries.
