1 pound sorrel
8 cups water
3 cinnamon leaves
6-7 pimento seeds

jamaican brown sugar

Wash the ginger thoroughly, leaving the skin on.

Beat the ginger to release its flavor.

Add 8 cups of water to a pot and add the beaten ginger.

Add 3 washed cinnamon leaves to the pot.

Add 6-7 pimento seeds to the pot.

Bring the mixture to a boil and let it boil for about 5 to 10 minutes to infuse the flavors.

After boiling, add 1 pound of sorrel to the pot and stir to cover the sorrel with the liquid.

Boil the sorrel for about 1 minute, then turn off the stove.

Let the mixture sit for a day to develop the flavors.
