2 cups fresh sorrel
1/2 cup uncooked rice
2 cinnamon sticks
1 tablespoon fresh ginger
2 bay leaves
1 teaspoon pimento seeds
4 cups water
to taste whiskey
to taste white rum
1/4 cup lemon juice
1 cup brown cane sugar

Wash the fresh sorrel thoroughly under cold water to remove any hidden dirt.

In a pot, bring water to a boil.

Turn off the heat once the water is boiling.

Add the washed sorrel to the hot water (do not boil the sorrel).

Add 5 to 6 cinnamon sticks to the pot.

Add uncooked rice to the mixture.

Add pimento seeds to the pot.

Add a few bay leaves (fresh or dried) to the mixture.

Grate some fresh ginger and add it to the pot along with sliced ginger.

Mix all the ingredients in the pot well.

Cover the pot and let it sit for at least 24 hours to infuse the flavors.

After 24 hours, strain the mixture using a strainer to separate the liquid from the solids.

In a separate container, add the strained liquid and mix in about 1.5 cups of whiskey.

Add about 1 cup of white rum to the mixture.

Squeeze in about 3 tablespoons of lemon juice or add the juice of one fresh lemon.

Add 1 cup of brown cane sugar to sweeten the mixture to taste.

Mix everything well until the sugar is dissolved.
