Heat 1 tablespoon of canola oil in a skillet over medium-high heat.
Add chopped green onions, thyme, and parsley to the skillet.
Add 2 cloves of minced garlic to the skillet.
Season with turmeric, masala, and a little salt, then add chopped carrots and mixed vegetables.
Sauté the mixture until the vegetables are slightly translucent, about 2-5 minutes.
Add boiled and flaked saltfish to the skillet along with the sautéed vegetables.
Add a splash of water to the mixture to keep it moist, then turn off the heat.
Prepare the dough by rolling it out on a floured surface after refrigerating for 20 minutes.
Cut the dough into circles using a pastry cutter.
Place a tablespoon of the saltfish and potato mixture onto each dough circle and fold it over.
Seal the edges of the dough to create a pie.
Beat 1 egg with a little water to create an egg wash and brush it over the pies for color.
Bake the pies in a preheated oven at 350°F for 12-20 minutes until golden brown.
Remove the pies from the oven and let them cool slightly before serving.
