1 can (13.5 oz) coconut milk
2 cups rice
2 cups water

Wash the chicken.

Season the chicken with salt, curry powder, chicken stock, paprika, thyme, and oil. Marinate the chicken and cover it, leaving it in the fridge for a few hours or overnight.

Cook the chicken in an air fryer, or alternatively, bake it in the oven or fry it.

Heat oil in a pan until very hot, then add chopped onion. Reduce the heat if it gets too hot.

Add Scotch Bonnet pepper and a teaspoon of tomato paste, then stir-fry for a minute.

Add spices: paprika, curry powder, salt, and garlic powder, then mix well.

Add chopped red bell peppers and chopped tomatoes, cooking for 2 to 3 minutes.

Add coconut milk (half a tin) and mix everything together.

Wash the rice thoroughly and add it to the pan, mixing it with the other ingredients.

Fry the rice in the mixture for about 5 minutes on low heat.

Gradually add water bit by bit, cooking the rice on low heat.

Cover the pan and let the rice cook, checking and testing for doneness. If the rice isn't ready, add a bit more water and taste for salt, adjusting as necessary.
