Seeraga samba rice – 2 Kg
Chicken – 2 Kg
Oil – 400 ml
Ghee – 2 tbl spoon
Cinnamon sticks
Cardamom – 2
Cloves – 7 to 10
Bay leaf
Onion – 7 to 8 (700 grams)
Green chilli – 10
Ginger garlic paste – 10 tbl spoon
Tomato – 8 (500 grams)
2 handful of mint leaves
Handful of coriander leaves
Biryani masala – 4 to 5 tbl spoon
Chilli powder – 1½ to 2 tbl spoon
Coriander powder – 1 tbl spoon
Turmeric powder
Curd – 300 ml
Salt
Juice of 2 lemon

Marinate chicken with curd, ginger garlic paste, biryani masala, chilli powder, coriander powder, turmeric powder, and salt for at least 1 hour.

Soak Seeraga samba rice in water for 30 minutes, then drain.

Heat oil and ghee in a large pot over medium heat until melted.

Fry sliced onions in the oil and ghee mixture until golden brown, about 10 minutes.

Remove half of the fried onions and set aside for garnish.

Add marinated chicken to the pot and cook until browned, about 5-7 minutes.

Stir in chopped tomatoes and green chilies; cook until tomatoes soften, about 5 minutes.

Add soaked rice on top of the chicken mixture without stirring.

Pour in water, lemon juice, and season with salt.

Cover the pot with a tight-fitting lid and cook on low heat for 25-30 minutes.

Remove from heat and let it rest for 10 minutes without lifting the lid.

Fluff the biryani gently with a fork before serving.
