Marinate 1 kg chicken with 1 cup yogurt, 1 teaspoon turmeric, and salt for 1 hour.

Make a green paste with 5 green chilies, 1 cup coriander, 1/2 cup mint leaves, 15 cloves garlic, 2 inches ginger, and 1 onion, adding a little water to blend.

Add half of the green paste to the marinated chicken and 1 tablespoon garam masala powder; mix well.

Heat 1/4 cup ghee and sauté 5 sliced onions until golden brown.

Soak 3 cups basmati rice in water for 15 minutes, then drain.

Boil 3-4 liters of water, add 2.5 tablespoons salt, and cook the soaked rice without a lid until almost done, about 10-15 minutes.

Drain the rice and let it cool.

Add the remaining green paste to the sautéed onions and cook until the raw smell goes away.

Add 1 tablespoon chili powder and 3 finely chopped tomatoes; cook until soft.

Add the marinated chicken to the tomato mixture, along with 1 cup water, and cook until the chicken is almost done.

Add 6-7 boiled baby potatoes to the chicken and cook for another minute.

Layer the chicken gravy in another vessel, then add the cooked rice on top.

Pour saffron milk over the rice and garnish with chopped coriander and fried onions.

Cover and cook on low flame for 10-15 minutes to finish the biryani.
