450g boneless chicken leg
2 cups basmati rice
300g onion
30g garlic
30g ginger
250g tomato
100g oil
900cc water
2 boiled eggs
coriander leaves (to taste)
25g salt
cinnamon stick (to taste)
2-3 star anise
2g mace
4-5 black pepper
4-5 cloves
2-3 bay leaves
3-4 green cardamom
3-4 brown cardamom
7g cumin powder
2g turmeric powder
15g coriander powder
1g hot chili powder
10g paprika powder
2g kasoori methi
1g garam masala

Wash basmati rice 2-3 times and drain.

Slice onions finely.

Mince garlic and ginger.

Dice tomatoes into 1cm cubes.

Cut chicken into bite-sized pieces.

Heat oil in a pot.

Add whole spices (star anise, bay leaf, green cardamom, brown cardamom, cinnamon stick, black pepper).

Add onions to the pot.

Add ginger and garlic, sauté until onions are golden brown.

Add powdered spices (coriander, cumin, turmeric, hot chili, paprika) and salt.

Add tomatoes and simmer for 2-3 minutes.

Add chicken and cook until it changes color.

Add garam masala when chicken is cooked.

If it starts to stick, add a little water and cook until moisture is gone.

Add washed rice and 900cc of water.

Add kasoori methi and mix, then bring to a boil.

Cover with a cloth and lid, cook on low heat for 10-15 minutes.

Once cooked, turn off the heat and let it steam with the lid on for about 10 minutes.

Serve garnished with cut boiled eggs.
