For this recipe, you're going to need 4 eggs, 2 medium size finely chopped tomatoes, 1 large finely chopped onion, 1 large roughly chopped onion, 2 green chilies, 1 small green chili chopped, 8 to 9 garlic cloves, 1 inch of ginger, 1 teaspoon of cumin seeds, 1/2 teaspoon of garam masala, 1/4 teaspoon of black pepper powder, 1 tablespoon of cilantro, 1 teaspoon of Kashmiri red chili powder, 1/2 teaspoon of turmeric powder, 2 tablespoons of coriander cumin powder, and oil.

Beat 2 eggs in a bowl and add a couple of slices of green chilies, some cilantro, a pinch of black pepper, and a pinch of salt. Mix everything well, beating the eggs for at least 1 minute.

In a pan, add about 1 to 2 teaspoons of oil and heat until hot. Add the beaten egg mixture to the pan.

Once the egg is somewhat set, start removing it from the bottom and rolling it in, then press it down so it sticks together. Remove the omelet and cut it into 1-inch pieces.

Repeat the process to make a second omelet using 2 more eggs.

Make a paste by adding the roughly chopped onion, ginger, and garlic to a blender and blend until smooth. Set aside.

In the same pan used for the omelet, add some oil and heat it. Once hot, add cumin seeds and let them sizzle.

Add the finely chopped onions and stir. Once they are somewhat cooked, add the onion garlic ginger paste and some salt. Cook for 3-4 minutes on low heat, covering and stirring occasionally.

After 3-4 minutes, add the finely chopped tomatoes, turmeric, Kashmiri red chili powder, and coriander cumin powder. Mix well and cover to cook until the tomatoes are fully cooked, about 3-4 minutes, stirring occasionally.

Once the tomatoes are cooked, add about 3/4 cup of water and mix. Turn the flame to high and wait for the water to come to a boil.

Once boiling, add garam masala and stir. Then add the omelet pieces into the gravy.

Add some cilantro, turn the flame to low, cover, and cook for 1-2 minutes.

After 2 minutes, remove the dish to a serving bowl.
