1.5 glasses of water
1/4 teaspoon garam masala powder

Break 4 eggs into a bowl.

Add finely chopped onion and green chilies to the eggs.

Add 2 pinches of salt and whisk the eggs well.

Heat a pan over medium flame and add a little mustard oil.

Once the oil is hot, pour the egg mixture into the pan and spread it evenly.

Cook on medium-low flame until the edges start to set, then fold the omelet.

Prepare the gravy by heating a kadhai over medium flame and adding 2 tablespoons of mustard oil.

Add crushed cardamom, a piece of sugar, whole red chili, cumin seeds, and bay leaves to the hot oil and sauté until brown.

Add finely chopped onion and sauté until the water evaporates, about 1.5-2 minutes.

Add 1 tablespoon of ginger-garlic paste and sauté until the mixture turns brown.

Add 1 large grated tomato and cook for a minute.

Stir in the spices: 1 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, and salt to taste.

Mix well and cook until the spices change color and oil separates.

Add 1.5 glasses of water and mix well, then cover and cook for 3-4 minutes.

After 4 minutes, uncover and check the consistency of the gravy.

Add 1/4 teaspoon garam masala powder and mix it in.
