Egg Omelette Curry

Traditionally enjoyed as a hearty meal, it reflects the Indian love for eggs and spices, often served with rice or bread. Today, it has gained popularity beyond Indian kitchens, inspiring variations across cultures, showcasing its versatility and comfort.

Parsley can be a milder alternative, while dried herbs are often more economical.
Grind coconut, cumin seeds, fennel seeds, coriander powder, red chili powder, turmeric powder, and garam masala powder in a blender with some water to make a paste.
To make the omelette, whisk all ingredients under omelette and mix well.
Heat oil in a non-stick pan, pour the omelette mixture when hot. Cook on one side, then turn to cook the other side. Remove from the pan, cool, cut into half, then cut crossways into strips, and keep aside.
To prepare the gravy, heat oil in a frying pan, fry sliced onion over medium heat until golden brown. Add the spice paste and fry for a further 4 minutes.
Add green chilies and tomatoes, sauté for 5 minutes. Add lemon juice, 400 ml of water, and salt. Simmer for 10 minutes.
Add coriander leaves and omelette strips, cook for a further 3 minutes over low heat and serve with Chapati/Roti.
