Prepare half a rack of ribs.

Mix 2 tablespoons of mustard with 1 tablespoon of green seasoning.

Season the bottom of the ribs with the mustard and green seasoning mixture.

Season the top of the ribs with the same mixture.

Preheat the pellet grill to 275 degrees using a competition blend of pellets.

Place the seasoned ribs on the grill and cook for 2.5 hours.

After 2.5 hours, prepare to wrap the ribs using two sheets of foil.

Add brown sugar, a little homemade adobo seasoning, slap your mama's cajun seasoning, and butter to the foil.

Add apple cider vinegar to keep the bottom moist, then wrap the ribs upside down in the foil.

Return the wrapped ribs to the grill at 275 degrees for another 2 hours.

Prepare the rib sauce using the leftover mustard and green seasoning mixture, 2 tablespoons of ketchup, 1 teaspoon of berman's barbecue sauce, 1 teaspoon of worcestershire sauce, 2 teaspoons of soy sauce, and hot sauce.

After 2 hours, remove the ribs from the grill.

If desired, brush sauce on the bottom and top of the ribs.

Return the sauced ribs to the grill for another 30 minutes to caramelize the sauce.

After 30 minutes, remove the ribs from the grill and check for doneness.
