Baked Middle Eastern Kofta

Originating from the Levant region, kofta has been a staple in Middle Eastern cuisine for centuries. Traditionally made from minced meat and spices, it reflects the region's rich culinary heritage. Kofta is often enjoyed during gatherings and celebrations, served with flatbreads and dips. Today, it has gained popularity worldwide, with various adaptations and cooking methods, including grilling and baking.

Preheat the oven to 450°F.
Combine ground beef, minced garlic, mushrooms, coriander, cumin, allspice, black pepper, and crushed red pepper in a bowl.
Mix the meat mixture with hands and form into meatballs.
Spray a sheet pan with nonstick cooking spray and place the meatballs on it.
Slice zucchini, red onion, and red pepper, and place them on the sheet pan with the meatballs.
Drizzle the veggies with olive oil and sprinkle with salt and pepper, then toss to combine.
Make a yogurt sauce by mixing Greek yogurt, lemon juice, garlic powder, fresh mint, and salt in a bowl.
Place the sheet pan in the oven and bake for 15 minutes, then turn on the broiler for an additional 3 minutes to char the meatballs and veggies.
Serve the kofta with yogurt sauce drizzled on top or on the side.
