Add cubed beef and sear until browned on all sides, about 5-7 minutes.
Pour in water to cover the beef and bring to a boil.
Reduce heat to low, cover, and simmer for 1.5-2 hours until beef is tender.
Add chopped potatoes and carrots, stirring to combine.
Continue to simmer for an additional 30-40 minutes until vegetables are cooked through.
Taste and adjust seasoning if necessary before serving.
