1 whole chicken
1 large onion
4 cloves garlic
1 tablespoon ginger
2 tablespoons berbere spice blend
1/4 cup olive oil
1/4 cup lemon juice
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon paprika
2 tablespoons tomato paste
1/4 cup fresh cilantro
1/2 cup water
2 tablespoons vinegar

Prepare the marinade by blending onion, garlic, ginger, berbere spice blend, olive oil, lemon juice, salt, and black pepper until smooth.

Place the whole chicken in a large bowl and pour the marinade over it, ensuring it is well coated.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
