In a separate pot, boil water and add chopped collard greens, cooking until tender, about 5-7 minutes.
Drain collard greens and set aside.
Once beef is tender, add chopped tomatoes, carrots, and bell peppers to the pot.
Cook for an additional 15 minutes until vegetables are soft.
Stir in cooked collard greens and lime juice, mixing well.
Garnish with fresh coriander before serving.
