Tamarind Drink

2 cups tamarind pulp
1 dried bay leaf
1 knob of ginger
0.5 teaspoon ground spice
0.5 teaspoon cinnamon
sugar to taste

Cover the tamarind pulp with boiling water completely.

Allow the tamarind to steep for about one hour, adding cinnamon, ground spice, and dried bay leaf during steeping.

After one hour, put on food gloves and squeeze the tamarind to remove the pulp from the seeds.

Add 2 tablespoons of grated ginger to the mixture.

Strain the drink to remove seeds, bits of shell, and pulp.

Sweeten the strained drink to taste.

Strain the drink a final time before serving.
