2 tablespoons vinegar
1/4 cup fresh lime
1/4 cup sour orange juice
1 teaspoon salt
1 tablespoon chicken base
2 tablespoons Haitian epis
1 teaspoon black pepper
1 teaspoon seasoning salt
1 teaspoon adobo
2 teaspoons fresh thyme
2 tablespoons fresh parsley
1 scotch bonnet pepper
1/2 teaspoon cloves

Wash the beef with vinegar, fresh lime, sour orange juice, and salt.

Squeeze fresh lime juice and add a little sour orange juice to the cleaned beef.

Add chicken base, 2 spoons of Haitian epis, black pepper, a little seasoning salt, and a little adobo to the beef.

Mix all the ingredients thoroughly and allow to marinate for 30 minutes to 1 hour (optional).

Add fresh thyme, fresh parsley, and scotch bonnet pepper to the marinated beef.

Place the beef in a pot without adding any liquid, just a tiny bit to get the flavor out.

Cover the pot and allow the beef to cook in its own juices until it comes to a boil.

Once boiling, reduce the heat to number 2 and let it slow cook until the beef is tender.

Remove the tender beef from the pot and transfer it to a deep fryer.

Fry the beef until it has a nice golden color.

Place the fried beef on paper towels to drain excess oil.
