Combine plain flour, baking powder, salt, and light brown sugar in a bowl and stir to combine.
Transfer the dry mixture to the processor bowl of an immersion blender.
Add cold, cubed unsalted butter to the dry mixture and toss to coat.
Process the mixture until it resembles fine breadcrumbs and begins to clump together.
Transfer the mixture to a large bowl and squeeze it in your hand until it forms a dough.
Lightly flour the work surface and take half of the dough to roll out.
Roll the dough to about 1/4 inch (5 millimeters) thickness, using parchment paper to cover it if it gets sticky.
Cut out rounds of dough, aiming for about 6 centimeters (2 and 1/4 inches) in diameter, and place them on a baking tray with space between each.
Chill the cut-out dough in the fridge for 1 hour.
Preheat the oven to 180°C (350°F) with a fan.
Bake the biscuits for 12 to 15 minutes, checking for a rise in the center and a slight dome shape.
Remove from the oven when they are lightly golden and let cool for a couple of minutes before transferring to a wire rack.
