Thar Gu Pyoke

Cultural Context

Thar Gu Pyoke, a vibrant Burmese salad, showcases the use of fresh, raw vegetables, reflecting the country's agricultural abundance. Traditionally enjoyed as a side dish, it embodies the balance of flavors—sweet, sour, and savory—that is central to Burmese cuisine. Today, it has gained popularity beyond Myanmar, often featured in Southeast Asian restaurants worldwide.

Servings4
1 large purple yam
8 cups water
1 cup sugar
tapioca pearls
1 can (400 ml) coconut milk
0.5 teaspoon salt
1

Peel the purple yam and dice it into bite-size pieces.

2

Rinse the diced yam quickly.

3

In a pot, bring 8 cups of water to a boil.

4

Add 1 cup of sugar to the boiling water.

5

Add the tapioca pearls to the boiling water and stir constantly to prevent sticking.

6

Cook the tapioca pearls for about 10 to 15 minutes until they are halfway done.

7

Add the diced purple yam to the pot and stir.

8

Add 1 can (400 ml) of coconut milk and 0.5 teaspoon of salt to the pot.

9

Stir and let it cook for another 10 to 15 minutes until the liquid thickens and the color changes to purple.

10

Check the yam for doneness; it should poke through easily like a potato, and the tapioca should be translucent.

11

Once satisfied with the look, color, texture, and taste, the dish is done.
