1

Grind 1.5 pounds of unblanched whole almonds using a nut grinder until powdery and fluffy.

2

In a bowl, mix the ground almonds and 1.5 pounds of powdered sugar together with your hands until well combined.

3

Add 3/4 teaspoon of baking powder to the almond and sugar mixture and mix thoroughly.

4

Measure 12 ounces of the mixture (which is one quarter of the total) and place it into a food processor.

5

Add 1 egg white to the food processor and blend until the mixture forms a moist paste that can be squeezed together.

6

If the mixture is too dry, add a tiny bit more egg white to help it come together.

7

Knead the paste for 2-3 minutes until smooth and pliable, then combine all four batches together.

8

Prepare the special kransekake pans by ensuring they are nonstick and ready to form the rings.

9

Fill each depression in the pans with the almond paste, ensuring the rings are no wider than half an inch to prevent them from baking together.

10

Bake three pans at a time in a preheated oven at 350°F for 10 minutes, or until you can smell the almond fragrance.

11

Remove the pans from the oven and use a wide metal spatula to carefully lift the rings off the baking sheet, allowing them to cool.

12

Once all 18 rings are baked and cooled, place the largest ring on a doily-lined plate for assembly.

13

Prepare icing ahead of time and use it to create a zigzag pattern on the largest ring.

14

Stack the next largest ring on top, securing it with the icing, and repeat the icing process for each subsequent ring.

15

Allow the assembled cake to dry at room temperature for a couple of hours before serving.
