Gatta Curry

1 cup gram flour (besan)
1/2 tsp red chilli powder
1/2 tsp saunf (fennel seeds)
1/2 tsp kasoori methi (fenugreek seeds)
1/4 tsp turmeric powder (haldi)
salt
2 tbsp oil
water
1/2 tsp ginger paste
1 tsp fine chopped green chillies
1 tsp kaju powder
3 medium sized tomatoes
2 tbsp yogurt
2 tbsp ghee
1/4 tsp asafoetida (hing)
1/2 tsp cumin seeds (jeera)
1/2 tsp fennel seeds (saunf)
1 tsp red chilli powder
1/2 tsp turmeric powder (haldi)
1/2 tsp garam masala
1 tsp coriander powder (dhania powder)
leftover boiled water used for gattas
kasoori methi (for garnishing)
coriander leaves (for garnishing)
fried cashew nuts (for garnishing)

Take a large mixing bowl.

Add gram flour, red chilli powder, fennel seeds, fenugreek seeds, turmeric powder, salt, and oil. Mix everything and add little water to knead into a stiff dough.

Divide the dough into 2 equal portions and roll into thin finger-like cylinders. Cut these into 10-12 pieces.

Boil enough water in a pan and add the rolls to the boiling water. Boil for 7-10 minutes until the gattas float on the surface.

Remove from heat and take out the rolls from the water, keeping the water aside for the curry base.

For the gravy, take a mixing jar and add ginger paste, fine chopped green chillies, kaju powder, tomatoes, and yogurt. Blend to form a paste.

Heat ghee in a pan, add asafoetida, cumin seeds, and fennel seeds. Sauté a little, then add the prepared puree and cook for 5-6 minutes on medium-low flame.

Add red chilli powder, turmeric powder, garam masala, salt, and coriander powder to the gravy and cook on high flame for 2-3 minutes.

Add the sliced gatta pieces to the gravy and cook on medium-low heat, then add the boiled water kept aside earlier.

Cook the gravy on medium-high flame until the gattas become soft.

Transfer the curry to a serving dish and garnish with kasoori methi, chopped coriander leaves, and fried cashew nuts.
