Gatta Curry

1 cup gram flour (besan)
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin
1 teaspoon ginger garlic paste
Salt to taste
Water, as needed
1 cup oil
1 teaspoon cumin seeds
1 teaspoon ginger garlic paste
1 ground onion
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon red chili powder
1 teaspoon kashmiri powder
1/2 teaspoon fenugreek seeds
1/2 teaspoon garam masala
Fresh cilantro leaves for garnish

In a mixing bowl, combine gram flour, red chili powder, turmeric powder, salt, and ginger garlic paste.

Gradually add water to the mixture to form a smooth and firm dough. Knead it well.

Divide the dough into small portions and shape them into cylindrical dumplings or gatta.

Bring a pot of water to boil. Add the gatta and cook for about 10-15 minutes or until they float to the surface. Remove the cooked gatta from the water and let them cool.

Once they are cool, slice the gatta into small rounds and set them aside.

Heat oil in a pan and add cumin seeds.

Add ginger-garlic paste and onion paste, sauté for a couple of minutes until the raw smell disappears.

Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute.

Cook the mixture until it thickens and the oil begins to separate.

Add water to adjust the consistency of the gravy and bring it to a gentle simmer.

Add the sliced gatta dumplings to the simmering gravy.

Let the gatta cook in the gravy for about 10-15 minutes, allowing them to absorb the flavors.

Garnish with fresh cilantro leaves.
