2 g ground black pepper
3.5 g garlic powder
1 g ground caraway seed
1 g ground allspice
60 ml ice water

Hang sausages on a stick to dry for 60 minutes at room temperature.

Smoke the sausages at 40°C for 1 hour, then increase to 60°C and smoke for another 1.5 hours.

Cook sausages in hot water at 75°C for 30 minutes.
