Today, Baba Ganoush has transcended borders, becoming a beloved appetizer in many cultures, often adapted with various spices and herbs.

Trim the ends of the zucchini and place them in a food processor.
Add garlic, cumin, smoky paprika, tahini, and about a tablespoon of lemon juice to the food processor with the zucchini.
Add 1 to 2 tablespoons of parsley to the food processor.
Pour in a generous amount of extra virgin olive oil and season with salt and pepper.
Blend the mixture until smooth and creamy.
Heat a pan over medium to high heat and add a good glug of extra virgin olive oil.
Slice the Asian shallots and add them to the hot oil in the pan along with the butter beans.
Season the mixture with salt and pepper, and optionally add chili flakes.
Add chopped parsley and any bitter greens like sorrel or rocket to the pan with the beans and shallots.
Once crispy, prepare a serving plate and spoon the zucchini baba ganoush onto it, creating a gap in the middle.
Optionally add Greek yogurt or coconut yogurt in the middle of the baba ganoush and swirl it with a spoon.
Top the baba ganoush with the crispy butter beans and garnish with extra pepper, lemon juice, and a drizzle of extra virgin olive oil.
Optionally sprinkle chili flakes and garnish with additional herbs like parsley or sorrel.
