Wrap 800 grams of eggplant in aluminum foil.
Set the wrapped eggplant directly over the gas stovetop.
Cook the eggplant, turning occasionally, until tender.
Alternatively, roast the eggplant at 190 degrees Celsius.
Remove the eggplant from the heat and cool for a few minutes.
Peel the cooled eggplant.
Place the eggplant in a blender.
Add 1 clove of garlic, 1 teaspoon of salt, a pinch of black pepper, 20 to 30 milliliters of olive oil, 100 grams of tahini, and the juice of 1 lemon to the blender.
Blend until smooth.
Transfer the mixture to a serving plate.
Garnish with chopped parsley, dust with paprika, and drizzle with 1 teaspoon of olive oil.
