Sabudana Wada

1 cup Sabudana (Tapioca pearls)
1 cup Water (for soaking)
1 cup Roasted peanuts (coarsely crushed)
3 medium Potatoes (boiled & mashed)
1 tsp Cumin seeds
2 Green chillies (crushed)
1 inch Ginger grated
8–10 Curry leaves (finely chopped)
Small handful Fresh coriander (chopped)
Juice of ½ lemon
2 tsp Sugar
1.5 tsp Salt (Sendha namak for vrat)

Soak 1 cup of sabudana in 1 cup of water for a few hours until they become soft.

Boil and mash 3 medium potatoes.

In a mixing bowl, combine the soaked sabudana, boiled potatoes, and 1 cup of coarsely crushed roasted peanuts.

Add 1 tsp cumin seeds, 2 crushed green chillies, 1 inch grated ginger, 8–10 finely chopped curry leaves, and a small handful of chopped fresh coriander to the mixture.

Add the juice of ½ lemon, 2 tsp sugar, and 1.5 tsp sendha namak (salt) to the mixture and mix well.

Shape the mixture into wada (fritters) and place them on a baking tray.

Bake the wadas until they are crispy and golden brown.
