3 cups washed rice
1 teaspoon black peppercorn
1 teaspoon fennel seeds

Heat oil in a skillet.

Add sliced red onions and fry until golden brown, about 4 to 6 minutes.

Stir in plain yogurt and the previously fried potatoes, along with a third of the fried onions; cover the pot.

After 3 minutes, uncover and sprinkle with fresh coriander.

Toast washed rice with black peppercorn, cardamom, fennel seeds, clove, and bay leaves until fragrant.

Add 4 cups of boiled water to the toasted rice; boil until 70% cooked, then cover and simmer on low heat.

Sprinkle mint and coriander on top of the rice, and create holes in the rice to add red food coloring if desired.

Serve the rice on a platter, adding a generous portion, and garnish with lemon wedges and remaining crispy onions.
