Start by preparing 1 kg of beef, which is about 2.2 lb, using stewing beef with some fat for flavor.

In a bowl, add the beef along with 1 teaspoon garam masala powder, 1 teaspoon black pepper, 1 teaspoon salt, 1 teaspoon cumin, 1 teaspoon turmeric, 1 teaspoon coriander, and 3 teaspoons chili powder.

Add 1 cup of chopped onion and 2 tablespoons of ginger garlic paste to the beef mixture.

Pour in 1/2 cup of corn oil and mix everything well with gloves on.

Heat a large skillet over medium heat and add the beef mixture, cooking for about 8 to 9 minutes, stirring occasionally.

After browning the beef, add 2 cups of chopped tomatoes and 2 fresh chilies (whole or chopped as preferred). Cook for about 6 minutes on low to medium heat until the tomatoes soften.

Add 2 cups of diced potatoes and 2 cups of water, then cook for another 6 to 7 minutes, keeping the heat gentle.

Prepare the whole spices for the rice: add 2 bay leaves, 2 dried red chilies, 1 teaspoon cumin seeds, 1 piece of cinnamon stick, 4-5 green cardamom pods, and 1 teaspoon black peppercorns to the pot.

In a separate pot, rinse 4 cups of basmati rice 2-3 times, then add it to 8 cups of water with salt to taste and the whole spices prepared earlier.

Cook the rice until it's 75-80% done, then drain it, leaving some water in the pot.

Layer the beef and potato curry in the bottom of the pot, followed by a layer of rice, then more curry, and finally another layer of rice on top, ensuring the last layer is rice.

Sprinkle 1.5 cups of chopped cilantro over the top layer of rice.

Prepare a turmeric water mix with 1/2 cup of water and a couple of teaspoons of turmeric, then drizzle it over the rice for color.

To cook the biryani, place a pan under the pot to create a barrier from direct heat, cover with a tight lid, and seal the edges with a wet kitchen towel or cloth.

Cook on the lowest heat for about 20 to 30 minutes, then turn off the heat and let it rest before serving.

After resting, remove the lid to reveal beautifully cooked rice and tender beef, optionally garnishing with fried onions and serving with plain yogurt.
