1

Season the beef with salt, pepper, and olive oil.

2

Add 2 teaspoons turmeric, 2 teaspoons black lemon powder, 2 teaspoons cumin, 2 teaspoons chili powder, 2 teaspoons coriander powder, and 1 teaspoon green cardamom powder to the beef.

3

Mix the beef and spices thoroughly, using hands or a spoon.

4

Cover the beef with plastic wrap and refrigerate for at least 1 hour, preferably overnight.

5

Heat sunflower oil in a decent-sized pot and add whole spices: cinnamon, bay leaves, cloves, and cumin seeds.

6

Sauté the spices for a few seconds to infuse the oil with flavor.

7

Add the seasoned beef to the pot and brown it for about 5-6 minutes over high heat.

8

Add enough water to cover the beef and cook until the water evaporates, stirring occasionally.

9

If needed, repeat adding water and cooking until the beef is tender, about 4-5 minutes each time.

10

Add 2 diced onions and 2 tablespoons of chopped garlic to the pot and cook for another 4-5 minutes.

11

Add 3 diced tomatoes and cover the pot, cooking on low heat for 20-30 minutes until the tomatoes break down and release moisture.

12

Check the mixture; if it looks dry, add water or stock as necessary.

13

Turn off the heat after 30 minutes when the beef is tender and the mixture is well cooked.

14

In a separate pot, cook 4 cups of basmati rice with 8 cups of water and a bit of extra cardamom until it's 75-80% cooked, then drain.

15

In the same pot used for the rice, layer the cooked beef, followed by a layer of rice, then optional dried fruit and cilantro.

16

Repeat the layering process, finishing with a layer of rice on top and half of the crispy fried onions.

17

Optionally, mix a teaspoon of turmeric with water and drizzle over the top before adding the remaining crispy onions.
