Ingredients

  • 2 cups lobia (black-eyed peas), soaked overnight
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. 1Heat oil in a pan over medium heat.
  2. 2Add cumin seeds and let them splutter.
  3. 3Add chopped onions and sauté until golden brown.
  4. 4Stir in ginger-garlic paste and green chilies, cooking for another minute.
  5. 5Add chopped tomatoes and cook until they soften.
  6. 6Mix in turmeric powder, red chili powder, and salt, cooking for a few minutes.
  7. 7Add the soaked lobia and enough water to cover them.
  8. 8Bring to a boil, then reduce heat and simmer until the lobia are tender (about 30-40 minutes).
  9. 9Stir in garam masala and cook for an additional 5 minutes.
  10. 10Garnish with fresh coriander leaves before serving.
