Lobia Curry

1 cup black-eyed peas (lobia)
1 onion, finely chopped
2 tomatoes, pureed
1 tablespoon ginger-garlic paste
2 green chilies, slit
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish

Soak black-eyed peas overnight or for at least 6 hours.

In a pressure cooker, heat oil and add cumin seeds. Let them splutter.

Add chopped onions and sauté until golden brown.

Stir in ginger-garlic paste and green chilies, cooking for a minute.

Add pureed tomatoes and cook until the oil separates from the mixture.

Mix in coriander powder, turmeric powder, red chili powder, and salt. Cook for a few minutes.

Add soaked black-eyed peas and enough water to cover them. Stir well.

Close the lid of the pressure cooker and cook for about 3-4 whistles or until the peas are tender.

Once done, release the pressure and open the lid. Stir in garam masala and adjust seasoning if needed.

Garnish with fresh coriander leaves and serve hot with roti or rice.
