1 cup Lobia (Black Eyed Beans)
2 medium tomatoes
1/2 inch ginger
2 green chillies
1 tbsp oil
1/2 tsp cumin seeds
1 bay leaf
1/4 tsp turmeric powder
1 tbsp red chilli powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 tsp amchur powder - dry mango powder
coriander leaves
salt to taste

Heat oil in a pan over medium heat.

Add cumin seeds and let them splutter.

Add chopped onions and sauté until golden brown.

Stir in ginger-garlic paste and green chilies, cooking for another minute.

Add chopped tomatoes and cook until they soften.

Mix in turmeric powder, red chili powder, and salt, cooking for a few minutes.

Add the soaked lobia and enough water to cover them.

Bring to a boil, then reduce heat and simmer until the lobia are tender (about 30-40 minutes).

Stir in garam masala and cook for an additional 5 minutes.

Garnish with fresh coriander leaves before serving.
