Cauliflower Pizza

1 and 1/2 cups (150 g) fresh cauliflower
1/2 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon Italian seasoning
1 cup (112 g) fat-free cheddar cheese
90 g salsa
1/4 cup (28 g) reduced fat Mexican blend cheese
3 oz lean ground beef (pre-cooked)

Use a food processor or blender to prepare the cauliflower.

Peel the heads off the stem of the fresh cauliflower, discarding the stems.

Add 1 and 1/2 cups (150 g) of cauliflower to the food processor or blender.

Add 1/2 teaspoon of basil, 1/2 teaspoon of parsley, and 1/2 teaspoon of Italian seasoning (or oregano) to the processor.

Add 1 cup (112 g) of fat-free cheddar cheese to the mixture.

Blend or process the mixture until it is well combined and ready to shape into a pizza.

Preheat the oven to 450°F (232°C).

Prepare a baking sheet with parchment paper or spray it with non-stick cooking spray.

Shape the cauliflower mixture into a round pizza on the baking sheet.

Bake the pizza crust in the oven at 450°F (232°C) for 10 to 15 minutes, until the bottom looks crispy.

After about 12 minutes, check the crust and remove it from the oven when it looks crispy on the bottom.

Top the crust with 90 g of salsa, 1/4 cup (28 g) of reduced fat Mexican blend cheese, and 3 oz of pre-cooked lean ground beef.

Return the topped pizza to the oven and bake for an additional 5 minutes at 450°F (232°C) or until the cheese is melted and cooked.

Remove the pizza from the oven and let it cool slightly before serving.
