Cauliflower Pizza Crust

Preheat the oven to 400 degrees Fahrenheit.

Rinse the cauliflower head and cut it into florets.

Place the cauliflower florets into a food processor and pulse until it resembles cauliflower rice.

Transfer the cauliflower rice to a bowl and microwave on high for 3 minutes, stopping halfway at 1 minute 30 seconds to fluff it.

After microwaving, check that the cauliflower is softened and can hold together when pinched.

Using a clean dish rag, place it over a bowl and transfer the cauliflower rice into the rag.

Wrap the cauliflower in the dish rag and squeeze out as much moisture as possible, allowing it to cool if necessary to avoid burns.

In a mixing bowl, lightly beat 2 eggs.

Add the squeezed cauliflower to the bowl with the eggs.

Add 1/4 cup of Parmesan cheese and 1/2 cup of mozzarella cheese to the bowl.

Add 1/2 teaspoon of oregano, 1/2 teaspoon of garlic powder, 1 teaspoon of salt, and 1 teaspoon of pepper to the bowl.

Mix all the ingredients together until well combined, breaking up any clumps of cauliflower as needed.
