Cauliflower Pizza

Chop the cauliflower in half and then into quarters.

Grate the tops of the cauliflower to create a rice-like consistency.

Blanch the cauliflower rice in hot, boiling salted water for 4 to 5 minutes until tender.

Scoop out the cauliflower rice using a strainer or chinois and push out as much liquid as possible.

Transfer the cauliflower rice onto a clean dish towel and twist to remove excess moisture.

Place the dry cauliflower rice into a bowl.

Add 1 egg, almond meal, Parmesan cheese, dried oregano, and lemon rind to the bowl and mix to combine.

Spread the mixture onto a baking sheet to form a pizza base.

Bake the pizza base in the oven at 200 degrees Celsius for 10 to 15 minutes.

Top the baked pizza base with tomato paste, sliced garlic, heirloom tomatoes, spicy salami, bocconcini, and fresh rosemary.

Drizzle with olive oil and sprinkle with Parmesan cheese.
