Start with 8 cups of cauliflower florets, which can come from one large or two small heads of cauliflower.

In a food processor, pulse the cauliflower florets until they resemble small grains of rice, working in small batches to avoid uneven chopping.

Steam the cauliflower in the microwave for 15 minutes, or in a pan with a little water for about 6-7 minutes until soft.

Let the steamed cauliflower cool to room temperature, then refrigerate for 30 minutes to cool completely.

Using a clean, lint-free kitchen towel, squeeze out as much liquid as possible from the cooled cauliflower to prevent a soggy crust.
