Olive oil is healthier with good fats.
Take a bowl and add 1 cup of fine semolina.
If using coarse semolina, grind it to a fine texture.
Add 1/2 cup of yogurt to the semolina and mix well.
In the same bowl, add water and mix until there are no lumps.
Let the mixture rest for 10 minutes to absorb water.
Prepare the stuffing: Grate 1 boiled potato and chop green chilies, garlic, and onion.
Heat oil in a pan and add cumin seeds until they splutter.
Add chopped garlic and green chilies, adjusting quantity to taste.
Add chopped onion and sauté until it turns pink.
Once the onion is pink, add the grated potato and all dry spices: coriander powder, cumin powder, garam masala, salt, and turmeric powder.
Add lemon juice for tanginess.
Check the semolina mixture; it should have expanded after resting.
Add 2 pinches of baking soda to the semolina mixture.
Add salt to taste and gradually add water to form a thick batter, not too runny.
Prepare the stuffing into long rolls, similar to bread rolls.
Grease glasses with oil to prevent sticking.
Fill each glass with a spoonful of batter, then add the potato stuffing, and cover with more batter.
Ensure the stuffing is centered and not overflowing.
Place a pot of water on the stove to heat up for steaming.
Once the water is boiling, place a stand in the pot and cover it with a plate to prevent water from entering the glasses.
Cover the glasses with a lid and steam for about 10 minutes until cooked.
