1 tbsp amber cumin seeds
1 tbsp black cumin seeds
1 tbsp white cumin seeds
1 cup candy rocks
1.5 cups water
1 cup rose water
100g clarified butter
1 cup wheat flour
1 tsp turmeric
1 tbsp ginger powder
1 tbsp cinnamon powder

Prepare 1 cup of saffron extract.

Smash 1 cup of cardamoms for their seeds.

Add 1 tbsp mix of white, amber, black, and white cumin seeds and smash them.

Add 1 cup of candy rocks and 1.5 cups of water, stir and bring to boil.

Add 1 cup of rose water and the smashed cumin and cardamom seeds, cover, and let it rest for 30 minutes.

Melt 100g clarified butter.

Add 1 cup of wheat or rice flour, 1 tsp turmeric, 1 tbsp ginger powder, and 1 tbsp cinnamon powder, stir on very low heat for about 8 minutes.

Add the melted butter and stir for 3 minutes.

Add the syrup made earlier and stir quickly for 30 seconds until it thickens.

Continue stirring for 5 minutes, then add the saffron extract while stirring.

Keep stirring for 10 minutes until it thickens again.

If it curdles, keep stirring for the last 20 minutes to get rid of that.

Serve the dish.
