1

Soak 1 1/2 cups of masoor dal for 2 hours after washing it until the water runs clear.

2

Heat cold pressed brown oil in a pressure cooker.

3

Add mustard seeds and curry leaves; wait for them to splutter.

4

Add roughly chopped onion and sauté for about 1 minute until the raw smell goes away.

5

Add 2 roughly chopped tomatoes and sauté until they soften, about 3-5 minutes.

6

Add ginger garlic paste and dry spices: turmeric, cumin, and 2 teaspoons of garam masala; sauté until the spices are roasted and fragrant.

7

Add the soaked masoor dal into the pressure cooker.

8

Pour in enough water (about 2 cups) to prevent burning at the bottom.

9

Season with salt and give it a quick mix.

10

Close the pressure cooker and cook for 3-4 whistles.

11

After cooking, open the pressure cooker; the dal should not be completely mashed but have a nice body.

12

Stir in chopped cilantro before serving.
