Masoor Dal, originating from the Indian subcontinent, is a staple dish made from red lentils. It is celebrated for its simplicity and nutritional value, often served with rice or flatbreads. Traditionally, it is a comfort food in many Indian households, embodying the essence of home-cooked meals. Today, it has gained popularity globally, with various adaptations reflecting local tastes and ingredients.

Pour red split lentils into the cooking vessel.
Rinse lentils under cold water until the water runs clear to remove starch.
Drain the lentils and add water until it sits about an inch above the lentils.
Add dried curry leaves to the pot.
Slice one green chili lengthwise and add it to the pot.
Slice and add a small onion to the pot.
Add salt to taste.
Add half to one teaspoon of turmeric to the pot.
Add three cloves of garlic to the pot.
Cover the pot and turn the heat to medium to bring to a boil.
While the lentils cook, prepare a spice mix of black pepper and cumin.
Pound a quarter teaspoon of black pepper and half a teaspoon of whole cumin in a mortar and pestle until coarse.
Check the lentils after about 15 minutes; they should be transparent when done.
If the lentils are too watery, you can add less water next time or adjust while cooking.
Turn off the heat and move the pot to a cutting board.
Add the spice mix of cumin and black pepper to the lentils and stir well.
Taste the dal to check for salt and adjust if necessary.
Optionally, add coconut cream for extra richness before serving.
