Mixed Dal Tadka is a staple in Indian households, combining various lentils cooked with spices and tempered with ghee. This dish is not only nutritious but also embodies the essence of Indian comfort food, often served with rice or flatbreads. It's a versatile dish, with many regional variations across India, making it a beloved choice for family meals and gatherings.

Split peas are often cheaper and provide similar texture.
Soak 150 grams of mixed lentils in water for 6-7 hours.
In a pot, add soaked lentils and 2 glasses of water.
Add 1/2 teaspoon salt, 1/2 teaspoon turmeric powder, and 1/2 teaspoon red chili powder.
Cook on medium-low flame for 6-7 whistles until lentils are soft.
In a separate pan, heat refined oil on low flame.
Add 1 large cardamom, 1 piece of cinnamon stick, 2 dried red chilies, and 1 teaspoon whole cumin seeds to the hot oil and sauté for a few seconds.
Add 1 finely chopped large onion and sauté until it softens without changing color.
Stir in 1 tablespoon ginger-garlic paste and cook for 2-3 minutes until the raw smell goes away.
Add 1 finely chopped medium tomato and cook until it softens.
Mix in 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1 teaspoon cumin powder, 2 teaspoons coriander powder, and 1 teaspoon salt, then add 1 teaspoon garam masala.
Sauté the spices for 3-4 minutes without adding water until the oil separates.
Add the cooked lentils to the sautéed mixture and mix well.
Add 1 glass of water to adjust consistency as needed.
Cover the pan and cook on low flame for 3-4 minutes.
Garnish with chopped cilantro before serving.
