1 block firm tofu (14oz | 400g)
3 tbsp brown rice flour
1 oz | 40g | 3/4 cup diced or grated carrot
2 tbsp chopped green onion
1 garlic clove
salt
1/4 tsp chili flakes
2 oz | 60g | 1 cup breadcrumbs
1/2 cup (1oz | 30g) parsley
1 tbsp lemon juice
1/2 cup (4oz | 115g) vegan mayonnaise

Mash 1 block firm tofu (14oz | 400g).

Optionally press the tofu for 15 minutes to remove excess water, but not necessary for the brand used.

Add grated potato to the mashed tofu.

Add 3 tbsp brown rice flour (or any flour of choice).

Add 1 oz | 40g | 3/4 cup diced or grated carrot.

Add 2 tbsp chopped green onion.

Mince 1 garlic clove and add to the mixture.

Season with salt and 1/4 tsp chili flakes.

Add 2 oz | 60g | 1 cup breadcrumbs and mix well.

For better binding, refrigerate the mixture for 15-30 minutes.

Set aside the mixture for 10 minutes.

Shape the tofu mixture into patties weighing 3 oz | 70g each and about 1/2 inch thick.

Coat the patties with breadcrumbs or chickpea crumbs.

Heat a little olive oil in a non-stick skillet.

Fry the tofu patties for about 5-7 minutes on each side or until golden and crispy.
