Brukina

Cultural Context

Brukina is a traditional Ghanaian beverage made from millet, often enjoyed as a nutritious drink. It is commonly consumed for breakfast or as a refreshing snack, especially in rural communities. This drink highlights the importance of millet in West African diets and has seen variations with added flavors or sweeteners in modern adaptations.

1 cup millet flour mix
water
about 1/8 cup additional millet flour
500 g Greek yogurt
1 cup whole milk
1 sache vanilla sugar
extra cubes of sugar
1

Measure 1 cup of millet flour mix into a bowl.

2

Add water bit by bit until a crumblike consistency is achieved.

3

If too wet, add about 1/8 cup of additional millet flour to adjust texture.

4

Form the dough into mini pearls using a sieve or bowl, shaking in a circular motion.

5

Steam the pearls over boiling water for roughly 15 minutes, covered with a cloth.

6

After 15 minutes, check and mix pearls, covering again to trap steam.

7

After another 20 minutes, check if pearls are soft and hold their shape.

8

Transfer the steamed millet pearls to a bowl and fluff to break lumps.

9

In a separate bowl, add 500 g of Greek yogurt, 1 cup of whole milk, and 1 sache of vanilla sugar, mixing well.

10

Add extra sugar cubes to taste for sweetness.

11

Combine the yogurt mix with the steamed millet pearls and mix until well combined.

12

Chill in the fridge before serving.
