1/2 cup Rice Flour
1 and 1/2 tbsp Baking Powder
1/4 tsp Salt
2 pcs Egg
3/4 cup Sugar
400ml Coconut Milk
3 tbsp Butter (melted)
1/2 cup Cheddar Cheese
1 pc Salted Egg
3 tbsp Desiccated Coconut
Banana leaves (optional for decoration)

Mix all the dry ingredients and set it aside.

In a bowl, add eggs and sugar then mix.

Add coconut milk.

Add melted butter.

Once wet ingredients are well mixed, add the dry ingredients mixture little by little while mixing.

Prepare a cake pan (5 x 2 in).

Place banana leaf in the cake pan.

Pour in the bibingka batter.

Cover with foil.

Place in the Air Fryer basket.

Set temp to 300F and cook for 10 minutes.

Remove the foil.

Add some salted egg and cheese.

Cook for another 10 – 15 minutes at 300F.

Check using toothpick test to make sure inside is cooked. If not, cook for additional minutes.

Finish up with some more cheese and desiccated coconut on top.
