½ cup tamarind paste
1 tbs salt
2 tbs fish sauce
1 tbs ground pepper
1 medium onion, sliced
2 medium tomatoes, sliced
6 cups of water
2 pcs taro, sliced
2 pcs green peppers
A bunch of string beans
A bunch of bokchoi or pechay
2 tbs cooking oil

Soak the tamarind paste into a cup of hot water and set aside for at least 15 minutes.

Salt the pork ribs. In a wide skillet, heat the oil and fry the meat quickly for two minutes on each side.

Add 6 cups of water and bring to a boil for 10 minutes over medium heat.

Skim off the scum and fat that accumulates on the surface of the stock.

Add ground pepper, onions, and tomatoes. Stir gently and simmer for about 20 to 30 minutes or until the meat is tender.

Stir the soaked tamarind paste and sift it to remove lumps. Pour it into the pot.

Add the taro and cook for another 8 to 10 minutes until it’s soft.

Add the peppers, string beans, and bok choi on top, cover, and continue to simmer for the last 2 minutes.
