Avocado and Goat Cheese Salad

1/2 cup sundried tomatoes packed in oil, chopped
4 cups arugula
3 tablespoons extra virgin olive oil
4 oz goat cheese, crumbled
1/4 cup pumpkin seeds
2 ripe avocados, diced
2 tablespoons balsamic vinegar
1 teaspoon maple flavored syrup by Lakanto
to taste salt
to taste pepper

Add the olive oil, balsamic vinegar, lakanto syrup and a pinch of salt and pepper to a small mixing bowl. Stir well to combine.

Add the pumpkin seeds to a dry pan over a low heat and gently toast for a minute or two.

Add the arugula to a large serving/salad bowl. Slice the avocado and roughly chop the tomatoes. Add to the bowl with the arugula and toss to combine.

Crumble the goats cheese over the salad and season with a little salt and pepper.

Sprinkle the toasted pumpkin seeds over the salad.

Drizzle with the salad dressing to serve.
