4-5 shallots
2 bottles of dark beer (2 x 33cl)
4 speculoos biscuits
2 slices of gingerbread
1 chicken stock cube
some fresh parsley

Heat some olive oil on medium high heat.

Stir fry the bacon for 3 minutes and remove from pot.

Stir fry the mushrooms for 3 minutes and remove from pot.

Add some olive oil and bake the pieces of rabbit golden brown. Season with salt and pepper. Remove from pot.

Add some olive oil and fry the shallots for 1 minute.

Add the rabbit again.

Add 1 bottle of dark beer, the speculoos biscuits, the gingerbread and the chicken stock cube.

Add another bottle of beer.

Lid on and let simmer for 1h15 minutes.

After 1h15, add the mushrooms and the bacon.

Finish with the freshly chopped parsley.
