Özbek Mantısı
Cultural Context
Originating from Central Asia, Özbek Mantısı is a cherished dish in Uzbek cuisine, often served during family gatherings and celebrations. These dumplings symbolize hospitality and are a staple at festive occasions. Today, mantı has gained popularity beyond Uzbekistan, with variations found in neighboring countries, each adding its unique twist to the filling and spices.

Mix flour, water, and salt to form a dough.
Knead the dough for 10 minutes and cover for 10 minutes to rest.
Prepare the filling by finely chopping 1 cup of onion and mixing it with 1 kg of ground lamb.
Add salt, black pepper, cumin seeds, and red pepper to the meat mixture and mix well.
Roll out the rested dough into thin sheets using a large rolling pin.
Cut the dough into large squares, approximately 10cm each.
Place a generous amount of filling in the center of each square.
Fold the dough over the filling to form a triangle and seal the edges tightly.
Bring the corners of the triangle together to form a dumpling shape and pinch to seal.
Place the dumplings in a steamer basket lined with parchment paper, ensuring they are spaced apart.
Steam the mantı over boiling water for 30 minutes until cooked through.
Melt butter and drizzle it over the mantı before serving.
